oooh, I love to bake... it's what I do when I find myself unable to sleep in the wee hours of the morning. and bread products are a definite fave... I love kneading. biggrin

however... while I've made plenty of home-made pizzas from scratch, I've strangely never even tried pizza tossing. think I might give it a go on the weekend sometime.

well let me know whens good for you. weeknights/weekends whatever. as a single male with no responsibility to anyone my timetable is quite flexible smile

i reckon the most important thing tho is the dough. im getting a hang of some basic tossing techniques - but the dough seems to split rather than thin out. i get to a point where its still too thick to bake, that i get holes in various areas rather than thinning out.

methinks i need to get some more binding action happening - a different type of flour perhaps (am using Strong White italian) - the wet/dry balance seems great for kneading - its just not stretching as much as it should.

You may need some more oil in the mix, Ed. And use high gluten flour. People often don't realise there are different types of flour... the high gluten type is sold as 'bread' or 'strong' flour. It is more stretchy. The lower gluten flour is better for cakes and pastry.. so a lot of 'general purpose' flour is lower gluten.. not so good for pizza base.

om the taste basis - it continues to improve - the pizza i just ate was quite exceptionally good (if i may be so modest) but still want to perfect the flying pizza base trick!

yep on the rising - leaving it for an hour or so - may extend that and see what happens.

using the standard dried yeast from the supermarket.

as one website said - i should be able to pinch the dough so thinly its almost translucent - whereas i can get mine quite thin but it would tear before getting to that level.

will try kneading and rising for a bit longer.

Elly and Ed have both moved out earlier this year... so I now share with a my age type lady I've known for years and her fella, a Kiwi guy who is Really Helpful and 2 young Americans. Sadly though it is not a jugglyfiery vibe house any more frown And I do miss that. Have to have an UberOz and invite everyone home for the evening.. smile

bringing people together is one of the things I love about you.
I recently met another amazing woman - Anne who runs Littleweed festival - We created a Community Circus with 12 kids and 12 adults in 2 weeks before it and a 2 x 1 hr show at it, aswell as me programming and compeering the Sat night Cabaret there. I had Strike playing 'Fire-pipes' as an Intro to the Cabaret, Captain Underpants also made his stage debut and has been signed up for other events.
Anyway - she reminds me very much of you Gabe. Very much a Community person about enabling and supporting people. Gota beautifull converted barn house, in an Orchard where the festy was also. No pool, but certainly a similar vibe to your place.
I stayed with her for 2 weeks leading upto the fest and have called in a few times since. I think ive found my 'wise women away' in NZ now too.
